Key Lime Pie
An easy dessert that you can make in just minutes. It will be the talk of any party or family gathering you attend, and it is so light and refreshing that most guests will want to eat more than one slice.
The Lemon Curd Tart recipe takes a bit longer to prepare, but it is just as delicious once you are finished making it.
Recipe:
1 cup of butter or margarine beat and mix well with half a cup of sugar, then add the eggs and vanilla extract, follow with two cups of flour, and mix well. Finally, to this mixture, add the grated zest of key lime and mix well. Place the mixture in a greased pie pan, and then bake for 50 minutes at 375 degrees.
The Lemon Curd Tart is just as easy to make. First, you will need to mix 1/2 cup of butter or margarine with 2 tablespoons of flour until blended well. Then add 3 eggs, one after another, and mix them well with the butter/flour mixture. Next, add one cup of sugar, half a cup of lemon juice or good quality lemon liquor, 4 tablespoons of grated lemon zest, and mix well. Place this mixture in a buttered pie pan, also place it in the oven at 375 degrees for 45 minutes.
Pecan Pie
This is a pie that most people think of when they hear the word ‘pie,’ and no one ever turns it down.
The crust for this sweet treat is easy to make, and it can be used to cover almost any type of pie or tart that you desire.
You will need one cup of flour, half a teaspoon of salt, and one cup of solid vegetable shortening, along with either cold water or ice cubes. Mix the salt and flour before adding the fat. Work with a pastry blender until you have a crumbly mixture. Then add 3/4- 1 cup of ice water or liquid, 1 teaspoon of vanilla extract, and mix well to form a dough. Divide the dough in half and press one portion into the bottom of a 9-inch pie plate. Bake this for 20 minutes at 350 degrees or until it is browned.
